Well, since the Lower Mainland has been hit with yet again, several inches of snow, I am in the office having yet another snow day!

The slowdown, from the weather,  gives me an opportunity to see where we are as a Company, and where we are going.  And, the best way to go about that and live within our means!

However as I sit and reflect, I feel how incredibly blessed I am to be sitting in a geographical location, where we have amazing chefs, food entrepreneurs, farmers, and all of the individuals and companies that assist them with the success they are.  So, what an inspiration!

I have enjoyed food in many places, from fresh, to prepared, and it is really hard to find “the consistent quality” on a global level, that we enjoy here.

So, as the weekend approaches, very quickly, and the forecast is warming up, we can all get out and enjoy the fresh, local food  from the farm (and many green houses), to the farmers markets, to grocery stores, to specialty stores,  to restaurants, and everything in between and know we are on the cutting edge of excellence!

Fresh out of the oven!

On Saturday, I got organized and decided to make a Spanish Rice & Bean Casserole for lunch.  Of course, believing I had all of the necessary ingredients, proceeded to put boil the water and add the package of ingredients.  So then I went to get my corn, and tomatoes.  I searched high and low in my pantry, and no tomatoes!  Looked in the fridge, no tomatoes!!!  I could of swore I had tomatoes.

I was not going to shut down everything and run out for tomatoes, fresh or canned!  So I thought, “It is what it is!” and marched through the recipe, adding 1 cup of peas to try to cover up the fact that I had no green peppers or tomatoes.  I really was not hoping for much, but once the grains were cooked, I proceeded to put it in the casserole dish and cover with shredded cheddar.  About 20 minutes later, when the cheese was bubbling, I took the casserole out of the over, and served it to myself.  Surprise, surprise!  It was delicious!  I had a couple more servings then had more for dinner!

As 2011 comes to a close, I take this time to sit quietly and reflect about where we have been and where we want to go.  I have been working on a lot of ideas, and now is the time to flush out what I believe to be the good ones, and prepare for implementation of them.

However, I would love to hear from you all on what you like, what you don’t, as this helps make us stronger.  Your input is invaluable to us!  So please share!

Wishing everyone a very Merry Christmas and A Happy New Year!

To good food, good times with family and friends, and a glorious Holiday Season!

My husband and I have come to enjoy slow cooked, local food.  Last night we enjoyed some crab and local roasted sweet potatoes, parsnips and carrots, drizzled with some olive oil and rosemary.  I convection roasted them at 400 degrees for twenty minutes, turned them over and roasted them for another twenty.  They were delicious!

With the rain gently falling, with what looks like more to come, I am going to do pork hocks, (de-boned and skinned) and slow roast them for 3 hours in tomatoes, onions, and spice.  After I remove the pork hocks, I reduce the juices, and add a touch of red wine to taste.   I either pour the sauce over the pork hocks or add the pork hocks back to the pot and coat them in the reduction, then serve.  Again, simple,  no rules, slow cooked.

Oh, and be sure, I will put on a pot of Glenlochar Kitchens soup for an appetizer and lunch tomorrow!

Approximately two years ago, I was on the search to purchase an agri-food company with a product that was real and whole. I  saw an ad for a “specialty food company” and called to learn of  Glenlochar Kitchens.   Being raised on a grain farm in Saskatchewan was somewhat of a natural progression to the kind of food product I chose. An agri-food from Canadian fields!

After doing my due diligence, I purchased Glenlochar Kitchens because the products had the foundation of great taste, quality ingredients, and a long history. I moved the entire operation to Delta, BC, where we currently produce, market and distribute from.

We are now working our way through our recipes and our packaging making the labels clean and planning the introduction of new products. When I purchased the company the labels were already really clean and simple, but soon will be even more so.

I invite you to join me on my natural food journey with the goal being, you can pour the Glenlochar Kitchen products into a pot and know that I have paid special attention to there being nothing in them that I would not eat.  I eat the soups, casseroles and pilaf regularly, and thoroughly enjoy the simple goodness they offer.

No Problem!  If by chance there was any left over ham, from you Thanksgiving Feast!  Add 2-3 cups of left over, chopped up ham to Glenlochar Kitchens Stonehouse Soup Mix in your crock pot or  on your stove top!  No one will ever know it was made with left overs!  Uniquely its own!

We kept it as simple as it gets.  After we boiled the turkey carcass, and removed the bones, we added one box of Glenlochar Kitchens Texas Tortilla Soup Mix, stirred and cooked for approximately an hour until the beans were soft.  Then we  served the soup.  That was it!  Delicious!  Just Simple Goodness!

Well, I had an early Thanksgiving Supper last night, because of family traveling schedules!  So last night after supper we decided to make a turkey soup,  we boiled up the turkey bones.  Well this morning I decided that maybe we should just make some soup for lunch. I cleaned all of the meat on the leftover bones.  Hmmm!  What kind of turkey soup shall I make.  I grabbed a box of Glenlochar Kitchens Texas Tortilla Soup Mix and in it went with some extra chopped carrots!  I will keep you posted how I made it my own and how it tasted.
